Curried Black and White Beans with Quinoa

Looks weird, but I'm very happy with this curry dish!

Mmmmm Curry!!!!  
I bought some Quinoa awhile back and had bookmarked this recipe at Sparkpeople to try Quinoa for the first time. I'm super happy with this!! I love the texture of the Quinoa and it does go really well with this recipe. I cooked the quinoa in chicken broth according to the package instructions and drained the excess liquid when it was done.
Kaylee said that the quinoa is weird, good but weird, lol.  I think it's weird too... yummy though.

Really good with quinoa, couscous, or brown rice.
17 Minutes to Prepare and Cook
         
         Ingredients
    2 Tbsp extra virgin olive oil 1/2 medium onion, diced 2.5 Tbsp curry powder 2 cups black beans, cooked/rinsed 1 cup great nothern bean, cooked/rinsed 1 cup chicken broth 1 15 oz can tomato sauce salt/pepper to taste
    Directions
saute' onion in medium pan at medium heat until just soft
add curry and combine for approx 2 minutes
add beans , mix well
add broth and tomato sauce - mix well
raise temp to boil
reduce heat to medium low and cover
cook additional 10 minutes

makes approx 6 - 1 cup servings.

It's hard to go wrong with curry. Looks yummy!
I haven't ever used quinoa but I was just talking to someone about it today. I'm gonna check Winco for bulk quinoa next time I'm in there.
