I bought some Quinoa awhile back and had bookmarked this recipe at Sparkpeople to try Quinoa for the first time. I'm super happy with this!! I love the texture of the Quinoa and it does go really well with this recipe. I cooked the quinoa in chicken broth according to the package instructions and drained the excess liquid when it was done.
Kaylee said that the quinoa is weird, good but weird, lol. I think it's weird too... yummy though.

Really good with quinoa, couscous, or brown rice.
17 Minutes to Prepare and Cook
- 2 Tbsp extra virgin olive oil
1/2 medium onion, diced
2.5 Tbsp curry powder
2 cups black beans, cooked/rinsed
1 cup great nothern bean, cooked/rinsed
1 cup chicken broth
1 15 oz can tomato sauce
salt/pepper to taste
add curry and combine for approx 2 minutes
add beans , mix well
add broth and tomato sauce - mix well
raise temp to boil
reduce heat to medium low and cover
cook additional 10 minutes
makes approx 6 - 1 cup servings.
