Weekly Weigh In (#11)

Last Week: 182.6
Today: 179.0
This Weeks Down: 3.6 pounds
Total Down since Feb 8: 14.8 pounds

This week I am down 3.6 pounds. (Which puts me down 1 pound from two weeks ago.) A little hormonal blip, and I'm right on track with my weight.
Seems that my pattern is most weeks I lose 1/2 a pound and then I get a good week every now and then. Although I'm sure that that could change, for the better I mean. I'm better at this then I used to be. It's not quite so tough. I should probably get a little better results if I cut back a couple of points... back to the Asian Pear Tea in the morning... instead of the small or medium skinny latte, I've been having.
I've been off and on with my tracking of points. I think it is best to track everyday, but some days I feel like I'm guessing too much, and I wonder why even bother. But I know that if I track, I do better and I don't accidentally dip into weekly points.
I also have tried really hard not to make Dennis feel like HE's sacrificing all the time. So I try to stay flexible. He wanted nothing to do with a salad today. He said he would suffer through that on week days, lol. He declared Sunday a "meat day". He was kidding, but not, ya know?

I probably ought to get back to the exercising, but it sure doesn't seem to show on the scale. I'll give it another try again. April just wasn't an exercise month for me at all. I still think it's important, so I need to recommit.

Indian Lentil Soup

"Pretty Damn Good, Baby." the rating Dennis gave this soup. I like it a lot. I doubled the red pepper and I thought it could have used even more heat, but this was a good place to start. That's the only change I made. I used about 3 cups of baked sweet potatoes in the soup. The recipe called for 2 medium sweet potatoes... to me, that's an opinion... so I measured how much I used (for future reference).
I would definitely make this again.

HOWEVER I originally only linked to the recipe and now it is lost forever...  This recipe looks close, though. :(

2 tablespoons olive oil
1 cup chopped red onion
2 cloves garlic, minced
1 1/2 cups red lentils, rinsed
2 large or 3 medium sweet potatoes, peeled and diced
1 teaspoon grated fresh ginger
2 teaspoons good quality curry powder or garam masala, more or less to taste
1/2 teaspoon ground coriander
1/4 teaspoon each cinnamon and nutmeg
1 teaspoon red pepper
6 Ginger Slices
Juice of 1 lemon or lime
Salt to taste


Heat the oil in a soup pot. Add the onion and garlic and saute over medium heat until golden, about 10 minutes. Add 6 cups water, followed by the lentils, sweet potatoes, and seasonings. Bring to a rapid simmer, then lower the heat. Cover and simmer gently until the lentils are mushy and the potatoes are done, about 20 to 25 minutes.

Meanwhile, thinly slice ginger, brush with olive oil and Broil until golden. Stir into the soup along with the lime juice. If the soup is too thick, adjust the consistency with a small amount of water.

Season with salt. If time allows, let the soup stand for an hour or two, then heat through as needed.

Pho Shizzle!!

I recently discovered a yummy yummy lunch. I went to Asia Palace located on the North West Corner of Redwood and 3500 South in West Valley City. Dennis and I went there on the recommendation of someone he works with. We've tried a couple of items, but last time we went, we hit the jackpot.
This... is Pho. I recommend the Beef Steak Pho and would not recommend the other beef meet available. Unless you are Vietnamese or very adventurous. It's a light lunch, even if you splurge a little and get a spring roll.
Pho is Rice noodles and it's served two ways... this is a beef version, that's what I get, with no steak... there is also Pho Ga which is a chicken version. The southern style is served with a very yummy aromatic BasilSaw Leaves... (sometimes)

Bean Sprouts
Lime and Jalapenos
You can also spice it up with sirracha (rooster sauce).

Low on points... light and fresh and yummy. If you get a chance to try it... you should. If you don't like it... ask for a "to go" container and bring it to me. (Just take out the meat first.) I will remember you in my will.

What I Love about

I was tagged to name 10 things I love that start with the letter W by Trish. After a little bit (well more like a lot) of thought here it is...

1. Wasatch Mountains

The picturesque mountains to the east of our home are so amazing and grand! These mountains are home to so many memories!
  • Childhood memories up on the summer range camping and four-wheeling with my Grandpa, Dad, Mom, sisters, cousins, aunts and uncles…
  • Trips “down below” with Mom and my sisters to go shopping and watching out the window for Devil’s Slide, or the brilliant red and yellow and orange fall colors contrasted against the dark pines.
  • More recently, my daughters all dressed up in formal dresses and gifting Dennis and I with “Word Wishes” at our wedding. Cooking Lobsters, Camping and Roasting a Pig and Exchanging Vows in front of family. Good Times.
Yeah… I really love those mountains and the memories they hold.

2. Weekends
Weekends are the best! I love the freedom to work on whatever I find important at the time. I love that I get to spend time with Dennis. Weekends are the time that we get to see Kenzie and find out what's going on with her. Weekends are also our time to spend Family time doing activities like boating! Did you see how nice the weather has been? Dennis, Dad, Ariel and Cortney went out on the lake for an hour yesterday. I even enjoy my weekend chores… Weekends are my time to get ready for a new week
Weekends are also my alone time, time to re-center and recharge my energy.

3. Work

I really do love my job, most days anyway. I enjoy the commute in with my Hubby. I love that managing gives Dennis and I a lot in common and plenty of conversation opportunities. We can relate to challenges, and feeling accomplished, and even the really bad day at work.
I love that work is FAR from repetitious and that it's not easy breezy. I like the challenge of implementing changes and working to make a positive difference in how things get done.
I love contributing in this way to becoming debt free.

4. Words
I love it when someone can weave words together and create. I love words all by themselves, and definitions, and word origins, and I love them in in poems, and plays, and songs, and books, and ceremonies, and I love to indulge myself in all of it.

I love how words can make you feel and others’ feel. I love how they can be used to share knowledge, hope, sympathy, caring, events… I love how they can be timeless and survive countless generations… I LOVE words.

5. Wasabi
I LOVE Wasabi. I love that it’s green. I love the way it burns my nose. I love the stuff that you eat it with… like pickled ginger and sushi… Mmmm. Waaaaasaaabeee.

6. Warmth
Warmth, it is s the snuggliest, coziest, happiest temperature. I love being warm. I don’t care what season it is… I especially like warmth as a people trait. I think it’s one of the best qualities to have.

7. Womanhood

I LOVE being a woman. I love that we are gatherers, nurturers, comforters, life-bearers, mothers, sisters. I love our bodies, our minds, the way we interact with our men, each other, ourselves. I love the way we think the way we feel... I think we are wondrous, beautiful, loving creatures.

8. Weekly Weigh-Ins

The Weekly Weigh-Ins are pretty awesome. I like them for a few reasons. I love to see and measure results I look forward to checking in with everyone on how they are doing. I like feeling supported and being supportive and working towards a goal. I like knowing that if I do well you will be happy for me. I like sharing in others’ successes. If I don’t do so well, then I am motivated to try and have a better result the next week. I like breaking up the goal into time bites. It gives you a chance to start again and succeed again.

9. Wiggle Room
I enjoy having flexibility. A little wiggle room is awesome whether you are talking about your schedule, your finances, your outfit, your plans, your project, your shower, anything. I love being in a position to have choices. I love having a spending plan because it gives me wiggle room when it comes to getting something new, being able to pay a bill that suddenly doubled the minimum payment… I like wearing my socks at night just a bit loose around the toes… wiggle room. It’s a beautiful thing.

10. Water
I suppose I would be remiss to not sing the praises of WATER!! Life sustaining essential fluid that it is. I love Water. I like to drink in it, bathe in it, swim in it, wade in it, splash in it, … good clean healthy water. What's not to love?

I was away from my scale this morning, so I really don't know where I'm at. I'm not expecting much this week... I haven't seen anything in the 170s during the week when I snuck a peak, looked like I was just sitting in the same place or just a bit higher. Hoping once the hormones leave me feeling myself again, I will be right on track where I want to be. I'll weigh in tomorrow and try and get something posted by tomorrow night.
I felt like I was eating nonstop on Saturday, so I was glad we ran to the store so I could graze on fruit all day. Everyone looks to be doing very good on their weight loss this week. I'm so proud of all the good choices with food and activity that are happening!!

thai curry aka evil jungle princess recipe

I think I'll look up points for this gem. The Thaifoon dish was heavenly. Click on title to follow link to a foodie blog!
Ingredients follow... you'll need to go to her link if you want to make it. Once I make it I'll post here how it tasted...
  • *1 Tbsp Red Curry Paste
  • *2 1/4 inch Lemon Grass stalk- trimmed and bias sliced (can't get fresh lemon grass? Some places have it dehydrated and others have a lemongrass paste!)
  • *2-3 lime leaves (can't find these? just use a little more lemon grass and/or lime juice)
  • *2 Tbsp Palm Sugar
  • *1 Tbsp Fish Sauce
  • *1 Tbsp Peanut Butter
  • *2 Tbsp Sweet Chili Sauce
  • *13 oz Coconut Milk (not the sweetened kind, just regular)
  • *Chicken Breasts- cut to bite size pieces or strips
  • *1/2 cup fresh chinese long beans-blanched (these are like really long green beans, but slightly different. If you can't find these at your oriental market, you can just use fresh green beans. They aren't in the picture because they didn't have any the day I went to the market.)
  • *Red bell pepper- cut into 1/4 inch strips
  • *1/2 cup blanched Asparagus spears
  • *Canned Bamboo Shoots
  • *1 tsp Lime Juice
  • *1/4 cup Fresh Thai Basil- chopped (if you can't find Thai Basil.... you guessed it... just use regular fresh Basil!)
  • *1/4 cup Frest Mint leaves- chopped
  • *Roasted Peanuts- chopped
  • *Jasmine Rice (or whatever kind of rice you want...)

Weekly Weigh-In (#9)

I weighed in this morning and sighed, "Well, 0.6 lb loss is still a loss."
When I put my weight in to Weight Watchers, I became very confused, Something is screwy here.
The web site told me "You lost 3.2 pounds."
It took me a minute to realize that I had become so fixated on the movement of the numbers that come after the decimal point, (since that has been the only one moving lately), that I hadn't been paying attention to the numbers before the decimal point, lol. Sure enough, a 3.2 pound loss! Yay! Happy dance!
The 170s are right around the corner!

Thoughts around the Meal Plan

Thai Chicken Fettuccine Heather made this for her Dad and I and it was delicious. I'm going to use almond butter instead of peanut butter and add some Indian tomato pickle to give it a bit of a kick.

The tomato pickle is something a friend of mine introduced me to about 7 years ago... awesome on your Ramen Noodles. I Finally found it at the Indian Store just south of the 7-Eleven on the corner of 35th and Redwood. Nice Store!!

Honey Lime Chicken Enchiladas
, (Trish's version) I really liked the Honey Lime Chicken Enchiladas that Trish made for a family dinner not long ago. I went searching for the recipe and found Phe/MOM/enom's version. It has heavy cream in it, though so I'm gonna ask Trish for the recipe she uses. (Recipe link inserted) Trish uses 1-29oz can or 3-10 oz of the green chili enchilada sauce. Sounds like there are UBER numbers of variations. I'm gonna check out Phe/MOM/enom's blog a little more when I have time.

This Jicama and Black Bean Salad looks to go well with the enchiladas, and would also be good as topping on the lunch salad.

Indian Lentil Soup I tried a soup at Sweet Tomatoes this last week and it was heavenly, so I went looking for a recipe for Indian Lentil Soup. This looks like it's close. Can't wait to try it!

Spiced Turkey Burgers with Yogurt and Chutney, Brown Rice, Cauliflower with Tomato Curry Sauce Trish made this awhile back. We loved the Turkey Burgers, but I've only used Ground Turkey Breast, because I am a bit tentative about Turkey Burger. I'm going to try using the 93/7 that Trish recommends. I can't justify the cost of the ground turkey breast on a regular basis and we really like these. This time we are going to try the cauliflower with tomato curry sauce too!

I was telling Heather that she looks like her mom a lot in this picture. I always do a double take. (Apparantly I'm paying no attention to the adorable G-Baby in the yellow inner tube, though.) Bad GrammaMom!!

A Lovely Brunch!!

I didn't think I could throw it together, but it turns out, with Dennis' help it was very possible. Our house was a wreck on Wednesday, but now, I feel caught up and we were able to hang out with the family and have a great time. I feel accomplished.

I pulled my coupons out and I'm starting to get them filed away. I'm like 2 weeks behind and tomorrow it will be 3 weeks, so this is important to get out of the way. Sandie Kittie likes to help with coupons, it's very sweet, but she slows me down a bit. She's been very social since coming out of the bedroom. She's curled up now taking a nap so I'm going to get back to those coupons now.

Oh! And I've folded and PUT AWAY two loads of laundry!! WooHOO!

Stop!!! I need to adjust my...

April exercise (trek to fitness) goal. I need something that I feel I can accomplish and 500 minutes sounds HUGE to me. I have 20 more days and at 20 minutes a day I can get in 400 minutes. So let it be written, so let it be done. (I'm sure that quote is from something that makes me sound like a real dork.) Oh well!

Breakfast Casserole

Preparation Time: 15 min
Cooking Time: 40 min

Bake 6 medium potatoes let cool, shred, remove peel, (or use thawed frozen hash browns) Season with (seasoned) salt & pepper and brown with butter or EVOO.
6 large eggs
½ cup of half and half (Fat Free, who knew there was such a thing?)
Ham cut up in cubes (about 1/2 pound)
Beat eggs and half & half together add your ham to egg mixture. (Could add 1/3 cup Chopped Parsley)
Distibute potatoes evenly in the bottom of a non stick/PAM sprayed cake pan. Pour egg mixture on top, cover with cheese.
Bake at 350 for 40 min. Check center as you would a cake to check for doneness.
(Is doneness a word, lol.)

Top with sour cream or fat free yogurt and salsa when serving. I don't mind the fat free yogurt in place of sour cream a bit. (Count your sour cream/yogurt if you use it.)

My friend Sara made this dish at Christmas. Since Easter is coming up I thought I would give it a try.

Missing the Girls

The house got quiet really fast... a little too quiet.
The girls are just so fun and full of energy, not to mention just really great positive people with good hearts!

They get along so great. I just can't get over how grown up they are getting to be... It's nice having the two of them here and listening to them talk. I am just so proud.

Weekly Weigh In and Progress Update

I am happy today. I finally am able to claim that 10 pound weight loss. So far I've lost 10.6 pounds. You can tell from the chart below that I've been ALMOST there for awhile now.

Yay!! I am stoked!!
I took some measurements at the end of February. Yesterday I checked my progress and that's coming along. I lost 2 inches around my naval, and a 1/2inch at my natural waist, I thought those would be the same. I lost 1 1/4 inches at my hips, and 2 inches on top. I am just this week actually feeling a difference in my clothes. Some of my pants are still tight, but not AS tight.
OK!! I did no exercise at all... I've been lazy. I lied when I said I would exercise, instead I stayed sucked into my computer. Bad. I will shoot to get my 500 minutes of exercise in April. That's going to take some focus! Oh! I did 67% of the 500 minutes I committed to do in March. That is 5% more than what I did in February. Let's see if I can get 70
% in April.

Dennis, the Girls and I went to a play in Park City. It was a really great one-man-show where this guy basically explained a few of the differences between men and women and did it in a really entertaining funny way.
All four of us were laughing pretty hard. Good times!
