Breakfast Bake

(Again, lol. I'm getting a lot of blogging mileage out of one recipe!) ;)
I mentioned that I was making modifications to the Blueberry Oatmeal Bake to make it healthier. This is the final version, as long as the egg whites work out. I needed to post my changes here so I don't have to remember them.

Breakfast Bake


½ cup Splenda
(4 Egg Whites & 1 teaspoon EVOO) or 2 Eggs
1 cup Applesauce or Applesauce with Cinnamon
1 ½ cups Skim Milk

1 ½ cups Six Grain Cereal (Lehi Roller Mills)
1 ½ cups Old-Fashioned Oats
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon Cinnamon


1 cup Blueberries
(3 points so far)

2/3 cup Craisins (1 point)


1 to 2 Tablespoon Vanilla Creamer (1 point)
Skim Milk (2 points)


Directions
Mix Splenda, Eggs (Whites), Applesauce and Milk.

In separate bowl mix Grains, Oats, Baking Powder, Salt and Cinnamon. Combine with wet mixture and add Blueberries and Cranberries. May add more cinnamon to taste.

Pour into greased 8 x 8 inch baking dish. May be placed in refrigerator overnight.

Bake in a 350 degree oven for 40 minutes. (45-48 minutes if refrigerated overnight).
Cut into eight pieces. Top with up to 2 tablespoons Vanilla Creamer and up to ½ cup Skim Milk when served.

Store extra pieces in their own individual container for easy breakfasts the coming week.
