Together Again!


Kaylee made it to Salt Lake and we are all happy to spend some time with her. We all spent a day on the town. We went to the bookstore and a movie.

Today...

Today I controlled my portions and made wise food choices. My hunger didn't get all CRAZY on me...
I'm happy.
I'm going to go do at least 15 minutes on the elliptical. There now I've said it and I have to go do it, or I'm a big fat liar. Ha Ha, I didn't intend on the pun... I promise.
I think maybe I better listen to my audio book Skinny Bitch in moderation, huh?

Weekly Weigh In (#7)

I gained half a pound for the second week in a row. I knew this last week would be tough, since I was traveling, but I really thought I would do better than I did.
I didn't exercise, again. And I can think of 3 meals where my portions needed to be cut back. Otherwise I made many good choices on my week away. In retrospect I didn't do terrible, it really it could have been SO much worse.
I need to make sure I have a good week this week so I can stay motivated... this is starting to wear me down.

I'm Getting a New G-Baby

My grandson will be born early this week and I won't be here to greet him until Friday! I am so excited to come home!
Kaylee will be in town Saturday and she will get to meet her nephew. It seems like so long since she has been home to our house. Kenzie will be out this weekend to see us and Amy has plans to come see Kaylee this weekend as well. What a great weekend this is looking to be! I wonder if my Mom and Dad will make an appearance??? (hint hint)
Dennis is going to go from a very quiet house to a very active house!

I am up half a pound this week.
So what went wrong? At first I went to "I don't know what happened." But you got to be a bit more honest with yourself than that if you are going to have success. So here is what I came up with: Hamburger (85%, ugh!!) that was not rinsed and drained found it's way on to our menu too many times along with those tortillas I love. I didn't track my intake well and I didn't do any exercise this week at all.
So do I know what to do different the coming week? You bet I do. Am I going to do it? You bet I am!!

Tight Two Lane Road to 10 Lane Freeway...

Dennis is doing pretty good after his surgery. I stayed home today to take care of him and make sure he didn't overdo. Amazing stuff they can do these days. He said his sinus pressure pain is gone. The doctor said he's had an infection in his sinuses for a long time, possibly a year. Dennis thinks it's been a couple of years.
Dennis is hoping that the surgery will also help with the ringing in one of his ears. His ears are popping, but the ringing is not gone, at least not yet... hopefully, but there's no guarantee. Nevertheless, the doctor said he's glad that Dennis had it done and thinks that he will feel lots better.
I'm glad. He needs to feel lots better.
He is really liking the lifestyle changes we've been making together and I can see the stars lining up for him. He's going to take off soon and really start driving his way toward a healthier lifestyle. Getting this surgery is a big step. I needed a good headstart, cuz he can run circles around me when he's healthy, lol.

Weekly Weigh In (#5)

I am down 2.2 pounds this week! I am happy with this, I had a rocky start this week and had my worries.
This is the first week of a friendly little competition I'm in "The Biggest Loser Challenge." The start date was Monday. I took a peek on the scale that day and was up over 2 pounds from the day before!! (Hormonal increase, I'm guessing.) The competition is 12 weeks long and it will do me good to have some extra drive for a couple months along my bigger journey.
One thing that went well this week was packing lunches. Even when I didn't get it done the night before I did it the next morning and we took our standby: Spinach Salad with Craisins and Pecans with either Litehouse Raspberry Walnut(yummy!) or one day I used diced peaches in extra light syrup(drained) as the dressing.
I'm also getting better about taking plenty of fruit to snack on. I had a major HUNGER hour one night after work and drank a bottle of water to help out on the way home, and I think the water did help out with not overeating. By the end of the week I had snacks figured out well enough that I had some carrots and fruit for the ride home at night. A practice I need to keep going for sure.
Exercise this week started off strong! I did 53 minutes on the elliptical on Monday and 30 Minutes on Wednesday. I also took 2 very short walks at work (13 and 15 minute walks) during the week. Kim suggested that we walk together and I was very happy to have some help in that department. Exercise so far this weekend hasn't happened.
I need to get back on my elliptical tonight. I am already at 111 minutes for the week, but I really need to be doing more for the competition as I want to be in like the top 25% for exercise, depending on the competition. Between me and the wall, I know I can do more than 111 minutes a week and I need to average higher anyway to reach my 500 for the month.

Family Visits are Fun!!!

I had a really good day visiting with Heather and David today. They ended up spending the night since they would have had to come back first thing in the morning. Dennis and David worked on Heather's blazer for 6 hours!! It turned out to be a big job getting the old parts off. It gave us a good chance to hang out, though.

Everyone's excited about boating this year. Last weekend Caydance noticed "The Lake is Melted!!!" she was so excited to tell Papa D.

Breakfast Bake

(Again, lol. I'm getting a lot of blogging mileage out of one recipe!) ;)
I mentioned that I was making modifications to the Blueberry Oatmeal Bake to make it healthier. This is the final version, as long as the egg whites work out. I needed to post my changes here so I don't have to remember them.

Breakfast Bake


½ cup Splenda
(4 Egg Whites & 1 teaspoon EVOO) or 2 Eggs
1 cup Applesauce or Applesauce with Cinnamon
1 ½ cups Skim Milk

1 ½ cups Six Grain Cereal (Lehi Roller Mills)
1 ½ cups Old-Fashioned Oats
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon Cinnamon


1 cup Blueberries
(3 points so far)

2/3 cup Craisins (1 point)


1 to 2 Tablespoon Vanilla Creamer (1 point)
Skim Milk (2 points)


Directions
Mix Splenda, Eggs (Whites), Applesauce and Milk.

In separate bowl mix Grains, Oats, Baking Powder, Salt and Cinnamon. Combine with wet mixture and add Blueberries and Cranberries. May add more cinnamon to taste.

Pour into greased 8 x 8 inch baking dish. May be placed in refrigerator overnight.

Bake in a 350 degree oven for 40 minutes. (45-48 minutes if refrigerated overnight).
Cut into eight pieces. Top with up to 2 tablespoons Vanilla Creamer and up to ½ cup Skim Milk when served.

Store extra pieces in their own individual container for easy breakfasts the coming week.

Pineapple Tai Chicken

I started to make a recipe out of WW New Complete Cookbook and ended up changing it, partially because I didn't have all the ingredients and partially because I didn't like the way it tasted part way through...
The end result was really good.

Here's what I did:
Made Jasmine Rice.
Took chicken breasts and cut them up and let them marinade in the fridge for 40-50 minutes in a marinade of the following:
2 Tablespoons Soy Sauce, 1 Tablespoon Worstechire, 2Garlic Cloves, 2 Tablespoons fresh grated Ginger, tablespoon of sesame oil, ... (next time all add some red pepper flakes here.)
Took the chicken out of the marinade and browned it in a tablespoon of olive oil, then added all the marinade.
After tasting I added a can of pineapple chunks, with the juice, and a few red pepper flakes, and about a tablespoon of Maggi Taste of Asia, Mild Sweet Chili Sauce, (Not enough red pepper flakes or sweet chili sauce, I like it hotter :) I fixed this on my own plate.) and let it reduce a bit.
Then served over the Jasmine Rice. This reminded me a bit of some Tai Pineapple Curry I had once, so when I had my leftovers I sprinkled a bit of Pumpkin Pie Spice over the Jasmine Rice.

I didn't have ANY curry (weird), but if I had, I would have thrown that in mine. Good!
Points served on 1 1/2 cups rice is 9 points. So good!

We got Beef!!! (and tons of housework!)

We just bought half a beef (about 600 pounds) and our freezer once again is full and we have a nice reserve to draw from. This meat is very good quality and spoils me against the stuff in the grocery store. Dennis hasn't seen the size of the ribeye's yet! Dang, they are huge! I am hoping Mike can tell me what percentage of fat the hamburger is. I'm guessing 93 or 95 %. It is pretty lean.
Amy and Mike brought the meat yesterday, and so after we got it into the freezer and I fed the family, (more on this later), we made a Costco run, since we both had our rebate checks to use up. I stocked up mainly on more fresh veggies and fruits. They have nice produce there.
I'm getting more and more picky about coupons I clip, but I'm still clipping. I wish I kept better records of how they are helping out. I'm betting that I'm about even on what I paid for my binder, if not very close.
I cleaned like a madwoman yesterday. I mopped all my floors,and vacuumed the furniture, did about 3 loads of laundry, cleaned on the kitchen, and today I STILL have dishes and laundry to do. It's like catch up every weekend. When I am debt free I will have a maid come help me with this stuff. Seriously, two hours a week, it's all decided. Don't tell Dennis, though. I haven't broke the news about the maid yet. I still have a couple of years before this conversation needs to take place.
Dennis now has uniforms for work so I'm thinking the amount of laundry we have on a weekly basis is going to be WAY less, but until I get this all put away... I'm not going to notice at all, lol. It's so cool to have someone helping with laundry!
I've got much to do to be ready for the upcoming week so I'll say so long for now.

This week I lost 0.2 pounds, lol. I was good about what I ate, so it must just be one of those things. I did dip into some of my weekly points, so maybe I can't do that and lose much, but a night out at Market Street, means I MUST have Raspberry Almond Torte, and I don't regret it. We don't get to go there every week or even every month. Maybe next week will show a little more.

Last week I made some whole wheat tortillas from scratch. They worked out pretty good. My favorite tortillas have 5 weight watcher points and the ones I made were 2 points each. A BIG difference, especially if you have two every meal! Turns out the tortillas were really easy to make and they weren't as delish as the Salt Lake Flor tortillas we get from Smith's and cook right before eating, but an acceptable substitute.

I exercised 150 minutes this last week! I'm very happy with that,so I am not changing anything here, except focus on distributing my excercise throughout the week a bit better. I'm working the plan and I'm sure that it will have a pay off. The weight loss is not as exciting as last week, but I can ride this out.

I bought tons more fresh fruit for snacks the coming week. I have some little oranges and will be making up the 5 point Breakfast Bake again(had to add points for the touch of vanilla creamer and skim milk that we put on top when it's served.

Yesterday I bought some Almond Butter to use in place of peanut butter. I am going to have a banana and almond butter and toast snack this coming week. I have been stuck on three meals a day and one small snack while I'm making dinner, because I'm really hungry come night time, so I'm going to work some snacks in so I'm eating a little more evenly throughout the day.

March Trek to Fitness Goals / Feb Progress

February Trek To Fitness and March Goal
Excercise:
My February Trek to Fitness Goal went fairly well. I set a goal for 360 minutes over a three week period, which works out to 120 minutes a week or six 20 minute workouts(or some other combination that gets me to goal). I made 63% of goal, which means I worked out 226 minutes more than I did in the previous month. I see this as progress, and all progress as a positive thing. I did fall short of the goal, but that makes next month all the more interesting. I think I'm improving and March will give me the opportunity to prove it.

I'm keeping the goal of 120 minutes a week for March and since there are a few more days to work with, I will shoot for 500 minutes as the monthly goal. This is realistic, but I have to overcome that tendency to do less than I know I can do. I even worked out after 9:30pm a couple of times in February, although I prefer to do it earlier in the evening. No excuses. Going for Goal!

Ready for Breakfast!

I've been trying to find the time for 2 weekends now to make breakfast on the weekend for the upcoming week.
This week I finally got it done!
I revised the Blueberry Oatmeal Bake recipe, substituting Splenda for brown sugar and skim milk in place of the whole or 2% milk I've used before. I also added 2/3 cup Craisins in with the 1 cup of Blueberries.
Call the recipe enough for 8 servings and each serving comes in at 3 weight watcher points. It looks pretty good. Hopefully it's tasty as well.
It looks like a small serving as I separated it out into 8 portions tonight, but this stuff was pretty filling. I think it will be nice to have a little something that's easy to start off the morning.
I also made lunch for tomorrow. Chicken and some spinach salad and we'll each take a little raspberry lime vinaigrette to add at lunchtime. Looks like a yummy lunch! We may end up having this twice.
I have a tiny little meal plan to get me started on the week! YAY! I'll update as I plan or as I eat, however it plays out!
I also have all the stuff except Fresh Ginger for Moo Shu Chicken, which is one of my favorite things to get from Chinese takeout. I haven't had it in forever, so I'm hoping the WW recipe is good. (New Complete Cookbook, page 168.) I'll let you know!

Last week went really well as far as results. I lost 3.8 pounds!
I would like another 13 weeks like that! Lol.
I kept peeking at my weight at the beginning of the week and kept seeing the same numbers.... I'm glad it worked out by week's end.
Pretty cool, I even worked in some of Amy's Lemon Cake that she made for my Grandma's 84th birthday! So good!!
Amy did really good with the meal plan and we had lots of yummy nutritious foods at the birthday party!
I have taken some beginning inches measurements and will report on inches at the end of the month.
It is so nice having company along the way and feeling like there is some accountability outside of me. I like having the WW site so I can get immediate feedback on food choices for the day. It helps to know you are going to record everything and it all counts. even if no one does see you. ;)
