Berry Baked Oatmeal Breakfast


Well if you have been paying attention to what they have been eating at Trish's house Baked Blueberry Oatmeal keeps showing up on the Menu Plan. Recently she mentioned that it was a keeper and I really got excited. So I found the link on her blog that takes you to the recipe at and then I noticed that The Little Red Hen Food Site had recently tried this recipe as well!
So in my mind Trish started a little game of Recipe Tag and since I saw that The Little Red Hen was obviously "it" when she made it on January 4th, and since I saw that post, and was the first one to comment since Trish, I am now it. Can you start a game of tag like that??? Oh well, it's my blog, I make the rules here! ;)
So I've mixed the ingredients and it takes less than 5 minutes so when you find out that you are "it" you will know that the time commitment is not big. It's super easy... no excuses.
Oh and the rule is that you must take a picture of your Bake and let us know if you had to alter the recipe.
Since I am making it in an 8" x 8" pan I will increase cooking time by 15 minutes as The Little Red Hen did when she made it in the smaller pan. (Recipe is for a 9"x9").
So who's it? Well I'm checking it out in the morning and I'll tag if it's yummy. But be prepared... I have it on good authority that it's so YUMMMY!
Recipe was altered because I didn't have blueberries, but I did have a can of blueberries, boysenberries, blackberries and strawberries. But my gut feeling is that just blueberries are better, since there are less seeds. But you gotta do what ya gotta do right? See ya tomorrow!

I think that your mixed berry version sounds delicious!
So did you bake it last night? Or assemble and refrigerate?
I'm curious how well it works to assemble and refrigerate. :)
I'm anxious to hear of your results. If I live through the next round of driving kids to school on the solid sheet of ice that is our roads this morning, I'll check back in here first thing.

Ahh. Best laid plans...
I forgot I was going to bake breakfast this morning and hit snooze. Dennis had a tour today at work so we couldn't wait for breakfast. Perhaps it will make for a good dinner for me? I can get Dennis to try it, but oatmeal ain't going to do it for him for dinner. Not enough protein... lol.
